Sweet Potato Spiced Energy Bites
 

I know what you may be thinking - sweet potato bites?? (at least that’s what I was thinking when I stumbled upon this recipe). Trust me on this one - if you are looking for a new healthy snack, these small but deliciously mighty energy bites from Barre3 Kitchen are amazing! Packed full of healthy fiber, protein, and vitamin A for an immune boost, they are the perfect grab-and-go snack for adults and kiddos alike.

Picture velvety sweet potato amplified by everyone’s favorite fall spices (the classic trifecta of cinnamon, nutmeg, and cloves), layered with wholesome oats, luscious dates, and rich golden maple, then rolled in coconut for a beautifully balanced flavor and texture.


Ingredients

Recipe yields 24 energy bites.

  • 1 and 1/2 cups oats

  • 1/4 cup ground flax seeds

  • 2 teaspoons ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon ground cloves

  • 1 cup canned sweet potato puree (15 oz)

  • 1/4 cup almond butter

  • 2 tablespoons maple syrup

  • 2/3 cups chopped dates

  • 1/2 cup unsweetened shredded coconut


Instructions

  1. Mix oats, ground flax seeds, and spices in a medium bowl.

  2. In a separate large bowl or KitchenAid mixer fitted with the paddle attachment, mix sweet potato puree, almond butter, and maple syrup on low speed until smooth.

  3. Slowly add dry ingredients to sweet potato mixture, mixing on low speed until fully combined.

  4. Fold-in chopped dates.

  5. Cover the bowl with plastic wrap and refrigerator for one hour.

  6. Remove bowl from refrigerator, and roll mixture into uniform balls.

  7. Place shredded coconut in in a small bowl. Roll each ball in the shredded coconut until fully coated.

  8. Store energy bites in the refrigerator, allowing to thaw for 1-2 minutes before enjoying.


Recipe Notes

  • Energy bites will stay fresh in an airtight container in the refrigerator for 3-5 days.

  • My favorite way to get unsweetened shredded coconut is in the bulk bins at Whole Foods because you can take as much or as little as you need.
